These are like my naughty snickers fix but filled with yummy goodness!
3 large tbsp peanut butter
1/2 cup Almonds
1/2 cup cashews
2 cups medjoul dates (pitted)
2 tablespoons of coconut oil
2 large tbsp chia seeds
- Add the nuts to your food processor and blitz until its a rough flour texture, leaving some bigger chunks.
- Add your dates and coconut oil…BLITZ.
- Add the remaining ingredients and blitz until it all comes together. If the mixture seems to dry at this point add a little water bit by bit until you get the desired texture.
- Take a tablespoon of the mixture and “squish” in your hands and roll them into a ball. Then get creative and roll them in some topping if you wish. Chocolate (dairy free for me) is always a winner in our house. place them on some baking paper and freeze for an hour our so.
Place them in a air tight container and keep them in the fridge.
